Mango Nectarine Thyme Salad with Soybean Sauce

This fruits salad is so refreshing and delicious, that you will make it again and again this summer. I love how mangos and nectarines complement each other and thyme get along so well with them.

It is simple, fresh and easy. I also make a very simple soybean sauce to serve along with this salad. It adds such a unique nutty taste to the salad that I am addicted. Scroll down for the recipe.



Mango Nectarine Thyme Salad

with Soybean Sauce

 

Prep time: 10mins Cook time (optional): 10-15mins Total time: 20-25mins Serves: 3-4

 

Ingredients:


Salad:

2 Mangos

2 Nectarines

2 Tablespoons Honey

1 Tablespoon Lemon Juice

1 Teaspoon Fresh or dried Thyme


Soybean sauce (optional):

200ml Milk of Choice

2 Tablespoons Soybean powder

2-3 Tablespoon of sugar

1 Teaspoon Vanilla extract


Directions:


Salad:

Make the dressing first. Add honey, lemon juice and thyme in a bowl, mix and set aside. I prefer making the dressing first because I would like the thyme to infuse in the honey mixture to get the best and even taste of thyme in salad.


Chops the fruits evenly and mix the dressing gently.


Serve Fresh.


Soybean sauce (optional):

Pour 200ml milk in a pan and set on a stove to cook on low to medium heat.


In a separate bowl, scoop soybean powder and add 4-5 tablespoon of warm milk. Whisk to combine until a thin liquid texture is obtained (add more milk if required).


Pour the soybean mixture into the heating milk, add sugar, vanilla extract and cook until slightly thickens.


Strain and set it aside to cool.


Pour on top of the salad for a unique taste.
