Gajar Ka Halwa (Carrot Halwa)

This delicacy is an absolute favorite of mine; don’t get me wrong I love every dessert but this has a special place in my heart. This sweet treat is loaded with carrots, which makes it not just yum but also very healthy. As my mom always says, carrots are good for your eyes. The recipe I am sharing is my mom’s but with a tiny twist, which just makes this dessert a whole lot yummier.   You can find the printable version of this recipe here.


Ingredients (Serves 4-5):

600gm Grated Carrots

80gm Brown Sugar

50gm Almonds (roasted and ground roughly)

500ml Whole milk/Almond milk

8 Cardamom pods (ground in 1 tablespoon sugar)


Instructions:

Start with grating carrots - I would say it takes 5-6 medium sized carrots. I would not grate the carrots too fine, I like it when the carrots have a bite.


Next, peel the cardamom, take the black seeds out and grind these together with a tablespoon of crystalized white sugar into a cardamom/sugar powder (to mix with sugar is an efficient way of grinding cardamom due to its small quantity). I prefer using freshly ground cardamom rather than the commercially sold cardamom powder. You can find whole cardamoms in any asian stores.


Toast the almonds until slightly brown and grind them roughly into a flour. Make sure the powder is not too fine, it is alright if you have some chunks of almonds in it. Don't forget to keep a few toasted almonds aside for garnishing.

Cook the grated carrots in milk and sugar, until slightly soft, which should take around 10-15mins.

Then add the ground almonds, ground cardamom sugar and cook for another 10-15mins (Don't forget to enjoy the sweet smell of cooking carrots and fragrance of cardamom).


Serve either hot or cold in bowls and garnish with sliced almonds on the top (optional of course).
